La Morge’s Famous Albondigas
In many respects, the albondigas, golf-ball-sized spheres of beef crowned with a sprig of cilantro and luxuriating in a tomato-chile sauce the color of sun-baked clay, is a fitting metaphor for the restaurant La Morada. The menu’s real stars are the complex, one-of-a-kind dishes from the owner’s home state of Oaxaca, like the elaborately spiced moles and those perfect little albondigas. Although the food is exceptional, a narrow focus on it risks obscuring the restaurant’s larger significance as a center of community organizing. South Bronx, 308 Willis Avenue

Birria-Birria Landia’s Taco
Further, popularized in Tijuana, Mexico, birria de res is a beef stew that, with the right amount of spices and guajillo chiles, can transform ordinary brisket into something out of this world. It was inevitable that this mixture would eventually be used in a taco. Two food trucks, one in Williamsburg, Brooklyn, and the other in Jackson Heights, Queens, and a third on the way to the Bronx sometime in the new year, have been opened by brothers José and Jess Moreno from Coatzingo to finally give the birria taco, long celebrated on the West Coast, its due in New York. To ensure that their tortillas are authentic,further, the two of them dip them in the beef fat floating on top of the stew before tossing them on the griddle.
This further gives the tortillas a color that is halfway between a camel coat and an orange traffic cone. The taco, after being assembled, has a subtle complexity due to the addition of cilantro, onion, spicy red sauce, and a wedge of lime. The various umami flavors further compete with one another to make their presence known with each bite. Pair it with a bowl of Birria-beef Landia’s consommé for a tasty meal. Like the pastries in the plate-glass window, which features a decal of an enormous cup of coffee, the shop’s exterior seems glazed in nostalgia, and the prices in the shop are almost suspiciously immune to inflation.
Furthermore, Covid-19 has only mildly dampened the mood inside: in accordance with social-distance protocol, the bakery has removed the stools from its inviting S-shaped luncheonette counter during the morning rush, but their metal poles remain, protruding like tree trunks in a deforested landscape. You further wouldn’t know it on a busy morning though, as the line of customers stretches out the door and the servers in their signature green and pink uniforms scurry around the wall of doughnuts with grace and efficiency.
