Two food trucks, one in Williamsburg, Brooklyn, and the other in Jackson Heights, Queens, and a third on the way to the Bronx sometime in the new year, have been opened by brothers José and Jess Moreno from Coatzingo to finally give the birria taco, long celebrated on the West Coast, its due in New York. To ensure that their tortillas are authentic,further, the two of them dip them in the beef fat floating on top of the stew before tossing them on the griddle.

This further gives the tortillas a color that is halfway between a camel coat and an orange traffic cone. The taco, after being assembled, has a subtle complexity due to the addition of cilantro, onion, spicy red sauce, and a wedge of lime. Furthermore, Covid-19 has only mildly dampened the mood inside: in accordance with social-distance protocol, the bakery has removed the stools from its inviting S-shaped luncheonette counter during the morning rush, but their metal poles remain, protruding like tree trunks in a deforested landscape. You further wouldn’t know it on a busy morning though, as the line of customers stretches out the door and the servers in their signature green and pink uniforms scurry around the wall of doughnuts with grace and efficiency.
